A Summer Strawberry Drizzle Cake Recipe

Strawberry drizzle cake

With the Strawberry season upon us I thought I would try this Strawberry Drizzle Cake recipe for Sunday tea. I have lots of  favourite cake recipes, but I am always looking out for new interesting seasonal recipes to try and this one I picked up from my local Waitrose store.


It is so easy to make I thought I would share it with my readers, plus it was gone within seconds of putting it on the table.

Ingredients

100g Salted Butter
1 Large Egg
120ml Semi Skimmed Milk
1 tsp Vanilla Extract
200g Self-Raising Flour
600g Strawberries
50g Icing Sugar
300ml Double cream

Method

Heat the oven to 180C/Gas 4.
Take a 23cm cake tin, grease and line the bottom with parchment paper.
Beat the butter and sugar together until soft and a very pale yellow.
Whisk in the egg, milk and vanilla extract.
Add flour a tablespoon at a time and fold in.
Spoon cake mixture into the cake tin and give the tin a shake or tap to flatten the mixture.
Wash and halve the strawberries, keep 6 of the halved strawberries and place the others cut side down on top of the cake.
Sprinkle cake with 2tbsp of granulated sugar.
Bake for 50-55 minutes until golden and set.
Leave to cool. Then remove onto a serving plate.
Take the 6 halved strawberries and squash through a sieve, collecting the juice and add to the icing sugar, mix until smooth, then drizzle over the cake.
Serve with double cream.
