Chicken and Mushroom Pie

After the rich Christmas foods, I was looking for a simple and tasty supper recipe where I could use my the new potatoes I have been growing over the winter months in large terracotta pots. 


I decided to do my version of a chicken and mushroom pie recipe, where the new potatoes can soak up the tasty creamy sauce.

Serves 4

Ingredients

500g chicken

1 garlic clove

250g pickling onions

250g mushrooms

2 tbsps olive oil

2 tbsps  seasoned flour

150ml dry white wine

150ml creme fraiche

1 sheet of ready to rolled all butter puff pastry

Flat leaf parsley

Salt and white pepper

1 free range egg, beaten

Method

  1. Preheat the oven to 200C/400F/Gas 6
  2. Peel and quarter the onions.
  3. Finely slice the garlic.
  4. Wash and slice the mushrooms.
  5. Add the olive oil to a heavy-based frying pan.
  6. Saute the onions and garlic in the oil, after a few minutes add the mushroom to the pan.
  7. I use chicken breast or thigh fillets or both, cut the chicken fillets into 2.5cm pieces.
  8. Toss the chicken pieces in seasoned flour
  9. Add the chicken to pan with a little extra oil and leave until it starts to colour.
  10. Pour in the white wine, mix in with the flour and juices.  Bring slowly to boil and simmer for approximately 15 minutes.
  11. Meanwhile get the pastry ready.
  12. Stir in the creme fraiche to the chicken mix, and bring to boil for a few minutes. Season with salt and white pepper to taste.
  13. Take 4 pie pots and use the pie pot top to cut out the pie lids from the puff pastry.
  14. Divide the chicken filling between the individual pie pots, add the pastry lid, brush with beaten egg wash, place on a baking tray and bake in the oven for 20 minutes or until golden brown.
  15. Empty the pie onto a plate, top with the lid and serve with broccoli and new potates.
